And we can’t believe that it’s this good. Bacon wrapped scallions are one of those recipes that make you seem super charming and fun. Like, for example, you’re asked to bring the appetizer for a get-together, or you need a little something-something to go with your dinner for a few close friends, and out you come holding a plateful of these babies, and everyone’s like, wow they must really have their life together if they just whipped these up out of nowhere, and in reality all you did was spend 5 minutes wrapping store-bought meat strips around something green that looks fancier than it really is.
Alternatively, make these for lunch just for yourself, and when they come out of the oven, you’ll be like, wow I must really have my life together if I just whipped these up out of nowhere. Unfortunately, as you may tell, I am lacking any type of real witty story, interesting background, or extremely useful information today.

Just one quick tip, though. Forgive me if I’m explaining this terribly. When you’re wrapping your scallion bunches, start wrapping from the bottom, and when you lay each bunch on the foil or parchment, make sure to lay each one down so that the end of the bacon strip is laying underneath the scallion bunch.
You can kind of see what I’m talking about in the scallion bunch that’s second from the right. As the bacon cooks it will stick to itself, and this helps “close” the bunch, so that the bacon won’t unravel when you’re flipping them over and transferring them to your serving plate.

Ingredients 1x2x3x
- 6 oz scallions about 12 stalks
- 6 oz bacon about 6-8 slices
- 1 tbsp maple syrup
- 1 tbsp fresh lime juice from about 1/2 a lime
- flaky salt for topping
Instructions
- Preheat oven to 400. Wash and dry the scallions well. Trim the green tops by 1/2 an inch or so. Beginning at the root end, wrap one piece of bacon around one to two scallion bunches (one if they are rather large, two if they are on the small/medium side), leaving about 3-4 inches of the green tops unwrapped.
- Place the scallion bunches on a sheet pan lined with foil or parchment, and drizzle with maple syrup. Bake at 400 for 10 minutes. Flip the scallion bunches over, and continue to bake 10-15 minutes more, removing at your desired bacon doneness.
- Lay the bunches on your serving plate. Squeeze lime juice over, and top with flaky salt.
Notes
Note about extra deliciousness: I have been known to mix in red chili flakes (or Italian calabrian chile oil) in with the maple syrup before drizzling over the scallions. Delicious.
